TAPIOCA PUDDING 
3 eggs, separated
1/3 c. tapioca
1/2 c. sugar
1 qt. milk (4 c.)
1 tsp. vanilla

In large saucepan, combine egg yolks, tapioca, sugar, and milk. Bring to a boil and stir while boiling 5 minutes. Let mixture cool while whipping egg whites to stiff peaks. Add vanilla to slightly cooled milk mixture, then fold together egg whites and milk mixture. Serve warm or cool. Our family favorite is to serve it cold with a dollop of strawberry jam.
