TAPIOCA PUDDING 
3 tbsp. tapioca
3 tbsp. sugar
1/8 tsp. salt
1 egg yolk
2 c. milk
1 egg white
2 tbsp. sugar
3/4 tsp. vanilla

Mix first 5 ingredients, let stand 5 minutes. Beat egg whites until foamy, gradually beat in 2 tablespoons sugar until soft peaks form. Cook tapioca over medium heat to a full boil. Stirring constantly 6 to 8 minutes. gradually add tapioca mix to whites. Fold and stir in vanilla. Cool 20 minutes.
