CREAM OF BROCCOLI SOUP | |
3 tbsp. butter 1/4 c. minced onion 3 tbsp. flour 3 c. milk 1 c. broccoli water 2 c. broccoli flowerets 1 tsp. salt 1 beef bouillon cube Pepper to taste Cook broccoli about 7 minutes in about 2 cups of water. Drain and save 1 cup of liquid for soup. Fill the base of the double boiler with about 2 inches of water and bring to a boil. In the top of a double boiler, over direct heat, melt butter. Add onion; cook until tender and stir in flour. Place pan on top of double boiler and slowly stir in the milk. Add reserved broccoli water and bouillon cube and stir until dissolved. Cook sauce until smooth and thickened, stirring often. Add finely cut broccoli and cook until heated through. Serves 6. May be made ahead and reheated in top of double boiler. |
