CINNAMON SWIRL LOAF 
7-7 1/2 c. flour
2 pkgs. yeast
2 c. milk
1/2 c. shortening
2 eggs
1/2 c. sugar
2 tsp. cinnamon
1/2 c. sugar
2 tsp. salt

In a bowl mix 3 1/2 cups flour and yeast. Heat milk, 1/2 cup sugar, shortening, salt until warm. Add to dry mixture; add eggs. Beat on low speed 1/2 minute, 3 minutes on high speed. Stir in remaining flour to make stiff dough. Knead 10 minutes; shape in ball. Put in greased bowl.

Turn once. Cover, let rise to double (1 hour). Punch down, divide in half, cover, let rest for 10 minutes. Roll out and brush surface with water. Mix 1/2 cup sugar and cinnamon; spread on dough and roll as a jelly roll. Place sealed side down in greased pans; cover and let rise until double (35-40 minutes). Makes 2 loaves.
