POTATO SKINS 
Bake potatoes. Cool then cut in half; cut again in half making 8 pieces. Scoop flesh from skins leaving about 1/8-inch shell. Mix:

1/4 c. melted butter
1 tsp. soy sauce

Brush this mixture on both sides of the skins. Place skins on baking sheet. Bake until crisp, 10-12 minutes. Serve skins sprinkled with coarse salt or choose topping:

Grated cheese
Chopped onions
Crumbled bacon
Sour cream
Salsa sauce
Or any of your favorite toppings or dips
