POTATO SKINS 
8 baking potatoes
4 oz. mozzarella, Swiss or your choice (grated)
Bacon bits & garlic salt
3 tsp. butter

Bake potatoes at 425 degrees for 1 hour (until fork tender). Cut potatoes in half (lengthwise). Scoop out potato, leave 1/4 inch around skin. Melt butter, brush on skins, sprinkle with garlic salt. Stuff with cheese, brush with remaining butter, sprinkle with bacon bits. Makes 16 skins. Bake at 400 degrees for 10 minutes until cheese melts. 4=1 serving (for diet allowance - 1 protein 1 fat.)
