SPANISH FUSILLI WITH GOAT CHEESE 
4 med. tomatoes, chopped
1 bunch scallions, sliced
1/2 green bell pepper, diced
2 cloves garlic, minced
1/4 tsp. oregano
8 oz. spinach fusilli
1 tbsp. chopped parsley
1 tsp. dried basil
1/2 red pepper, thin strips
5 oz. goat cheese, thinly sliced
3 tbsp. olive oil

Heat olive oil in a large skillet. Saute the tomatoes, scallions, green peppers, red peppers, garlic and oregano for 5 minutes. Meanwhile cook the pasta. Add the parsley and basil to the skillet and stir for about one minute. Combine the pasta and sauce in a large bowl and toss. Serve immediately with the goat cheese, thinly sliced over the top. Two servings.

Not bad. More like a hot pasta salad then "spaghetti". Serves way more then two. Cut recipe in half for two. Add more goat cheese for "spaghetti" taste. Overall, very healthy!
