PORCUPINES IN TOMATO SAUCE 
12 oz. ground turkey
1 1/2 oz. uncooked rice
1/4 c. diced onion
2 tbsp. chopped parsley
1 tsp. salt
1/8 tsp. butter
1/8 tsp. thyme
1/8 tsp. pepper

SAUCE:

1/2 c. tomato paste
1/2 c. water
1/3 plus 2 tsp. chicken broth
1/8 tsp. garlic

Preheat oven to 350 degrees. Combine first 8 ingredients. Shape into 8 balls. Spray casserole dish with Pam. Arrange balls in dish. Make sauce. Pour over porcupines. Cover and bake 1 hour. Turn once during cooking.

Each serving equals 4 protein, 1 bread, 1 vegetable, 10 optional calories, 9-11 grams fat.
