BROCCOLI, CHEESE AND RICE
CASSEROLE
 
2 (10 oz.) frozen chopped broccoli, cooked and drained
1 1/2 c. rice, cooked
1 sm. onion, chopped
1/4 stick butter, melted
1 (8 oz.) jar Cheez Whiz (melt in microwave)
2 eggs, beaten
1 can (10 3/4 oz.) cream of mushroom soup
1/2 c. mayonnaise
Salt and pepper to taste
1 sleeve Ritz crackers, crushed

Cover frozen broccoli with water. Bring to boil - boil for 2 minutes. Drain. Set aside to cool.

Combine remaining ingredients except Ritz crackers. Mix with broccoli. Pour into casserole. Top with crushed Ritz crackers. Bake at 350 degrees for 30 to 45 minutes. Serves 8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
