HERRING SALAD 
1 jar prepared herring
2 hard cooked eggs
1 1/2 c. pickled beet salad
1/2 c. onions
1/2 c. pickles
2 stalks celery
3 c. cold boiled potatoes
1 c. diced apples
2 tbsp. chopped parsley

DRESSING:

1 c. sour cream
1/3 c. wine vinegar
1/2 c. mayonnaise

First cook and peel and dice the potatoes. While potatoes are still warm, add dressing. Add all other ingredients. Let stand several hours in a cool place, but avoid refrigeration unless it is a very hot day.
