SALSA 
4 lbs. ripe tomatoes, peeled and chopped
4 cloves garlic, minced
2 med. onions, chopped
8 jalapeno chilies, sliced using some of the seeds
2/3 c. apple cider vinegar
3/4 tsp. oregano
Pinch of cayenne pepper
Salt to taste
2 tbsp. tomato paste

Simmer all but jalapeno chilies for 10 minutes. Add chilies and simmer for 10- 15 minutes.
