CHICKEN CACCIATORE 
1 (2 1/2 lb.) broiler
1 c. chopped onion
1 c. chopped celery
1 c. chopped bell pepper
1 lg. can mushrooms, drained
1 sm. can tomato paste
1 lg. can tomato sauce
Salt, pepper, oregano, thyme, garlic to taste

Place broiler and all other ingredients in heavy bottomed pot. Add water if needed. Cook slowly until all ingredients are as one sauce. Remove chicken and debone. Return chicken to pot. Serve over thin spaghetti and sprinkle with favorite cheese. Serves 4 to 6 generously.
