CHINESE CHICKEN SALAD 
1 head of lettuce, chopped
3 chicken breasts, steam and shred
1 pkg. almond slivers, toasted
1/2 pkg. won ton skins, sliced in thin strips
1/2 bunch green onions, chopped
1 bottle rakkyo, chop as needed (Japanese pickled scallions, found in the
Oriental section in the markets)
Sesame seeds, toasted

Fry won ton skins in hot oil; drain. Layer each ingredient over lettuce. Sprinkle with sesame seeds.

DRESSING:

1/2 tsp. Dijon mustard
2 tbsp. sugar
2 tsp. soy sauce
1 tbsp. sesame seed oil
1/4 c. salad oil
3 tbsp. vinegar
2 drops of ketchup, optional

Combine all ingredients in a jar and mix. Pour over salad.
