MEXICAN HOMINY 
2 cans hominy, drained
1/4 stick butter
1/2 c. chopped onion
1/4 c. chopped jalapeno pepper
8 oz. sour cream
1 tsp. chili powder
2 c. grated Cheddar cheese

Mix all ingredients except cheese and put in greased casserole. Top with cheese. Cover and bake at 400 degrees for 30 minutes.
