POTATO - CHEESE PUFF 
3 egg yolks, beaten
1/4 c. milk
3 c. cooked, seasoned mashed potatoes
1 tsp. grated onion
1 tbsp. minced parsley
2 c. shredded cheese
3 egg whites, stiffly beaten

Combine egg yolks and milk in a large bowl. Add remaining ingredients, except egg whites; beat well. Fold egg whites into mixture. Pour mixture into a greased 2 quart baking dish. Bake in preheated oven (375 degrees) 40 to 45 minutes or until knife inserted in center comes out clean and top is browned. Serve at once.
