DAISY'S GRIDDLE CAKES 
1 c. all purpose flour
2 tbsp. sugar
2 tsp. double acting baking powder
1/2 tsp. salt
1 egg, slightly beaten
1 c. milk
2 tbsp. butter, melted
1 tsp. vanilla extract

In a large bowl combine dry ingredients. In another bowl combine remaining ingredients. Add dry ingredients and stir until just combined. Prepare griddle, grease if necessary. Use 1/4 cup for each pancake. Bake 3 to 5 minutes, turn and bake other side. Makes about 8, at 125 calories each. Note: I double this recipe for a family of 6; also, you can triple the recipe and freeze the extra for quick microwave breakfasts!

Since microwave ovens vary in power, you may need to adjust your cooking time.
