FLOUR TORTILLAS 
3 c. flour
1/3 c. shortening or lard
1 tsp. salt
3/4-7/8 c. warm water

Work shortening into flour and salt. Stir in water until dough forms into a ball that come clean away from sides of bowl. Knead for 2 minutes on a floured surface.

Divide into 16 equal pieces. Cover with a damp cloth and let stand 15 minutes at room temperature. Roll thin on a well floured surface into a circle. Cook in preheated, lightly greased heavy fry pan on medium heat until light gold, pierce any large bubbles with a fork. Turn once.
