HERB MASHED POTATOES 
4 lb. potatoes, partially peeled and cut in 1-inch cubes
1 tsp. salt
1/2 c. fresh herbs (i.e., parsley, basil, rosemary, chives) or 1/4 c. dried
2 tbsp. butter
1/2 c. milk
salt and pepper to taste

Simmer potatoes, salt and herbs in water until potatoes are soft. Drain potatoes and mash; add butter, milk and season to taste with salt and pepper.

Serves 4.
