SHRIMP GUMBO | |
1 lb. cooked shrimp 1 (10 oz.) pkg. frozen okra 1/3 c. shortening 2/3 c. chopped onion 2 bay leaves 2 cloves garlic, crushed 1 1/2 tsp. pepper 1 tsp. file powder 1 can tomato sauce 1 can canned tomatoes 6 drops Tabasco 1 1/2 tsp. salt 2 c. hot water Saute okra in shortening, about 10 minutes. Stir constantly. Add onions, garlic, salt and pepper. Stir and cook 3 minutes. Add tomato sauce, water, tomatoes, and bay leaves. Cover and simmer 20 minutes. Remove bay leaves. Add Tabasco, file and stir. Remove from heat. Add 1 1/2 cups cooked rice or 1/2 box cooked small shell macaroni. |
