FLAN
1 can evaporated milk
1 can condensed milk
3 eggs
1 tsp. vanilla
1 c. sugar for caramelizing

Beat eggs slightly with fork and strain into bowl. Add evaporated milk, condensed milk and vanilla. Mix all together well, and set aside.

Put sugar in small saucepan and over medium to low heat, melt sugar carefully watching that it doesn't burn. Should melt to a caramel color. Stir with a wooden spoon. When in liquid form, pour into flan pan (can use a loaf pan) and spread well around all the mold, up the sides until it hardens.

Pour milk mixture into mold. Preheat oven to 325 degrees. Set mold pan into a lasagna pan filled halfway with water and place both in oven. Cook 5 minutes. Cool completely in refrigerator. Invert onto a plate when ready to serve.
