2 lbs. potatoes 2 tbsp. parsley, chopped Salt and pepper (can use lite salt) 1 tbsp. butter (can use Butter Buds) Peel and cut potatoes into quarters and cook in boiling, salted water until tender, about 20 minutes. Drain, reserving a few tablespoons of cooking water. Add parsley, 1 teaspoon salt, 1/4 teaspoon pepper, and butter. Set mixer on medium speed and beat until smooth. Add reserved cooking liquid (about 2 tablespoons) while beating. 107 calories. |
