ARTICHOKES WITH DILL SAUCE 
1 stick butter
3 tbsp. flour
2 tbsp. parsley
8 oz. chicken broth
2 oz. lemon juice
1/2 tsp. dill weed
1/4 tsp. Cajun seasoning
1 (8 oz.) whipping cream
1 lg. egg yolk
Pinch of salt
1 tsp. dry mustard
1/2 tsp. yellow mustard
8 med. steamed artichokes

Melt butter over medium heat. Add flour and stir. Allow butter and flour to rise (about 3 minutes). Add parsley, dill weed, chicken broth, lemon juice, Cajun seasoning to mixture. In bowl, put cream and egg yolks and hand beat together. Place in microwave for 1 minute. Stir at 30 seconds. Add to mixture and stir. Add salt and mustards to mixture and simmer on very low flame for 20 minutes. Clean inside of artichokes out and discard. Fill middle with dill mixture and drizzle over outer leaves.

Since microwave ovens vary in power, you may need to adjust your cooking time.
