BAKED BEANS | |
1 lb. great northern beans 1 tsp. mustard 1 tsp. salt 1 tsp. onion powder 3 tbsp. ketchup 3 tbsp. molasses 1/2 c. brown sugar 1/4 tsp. pepper 1/4 lb. salt pork 1/4 tsp. baking soda Soak beans overnight. Start beans in cold water with 1/4 teaspoon baking soda. Boil and pour off all water. Add fresh water to cover, cook until tender with salt. Add rest of ingredients except salt pork. Cook salt pork until tender and add to beans. Also add a few tablespoons of fat from pork - cook at 325 degrees for 2 hours, if dry add a little more water. Serves 8-10. |
