ALAMO TAMALE SUPPER 
1 tbsp. shortening
1 med. onion, chopped (about 1/2 c.)
1 (15 oz.) can beef tamales in sauce
1 (8 oz.) can whole kernel corn
1 (8 oz.) can tomato sauce
1 tsp. chili powder
1 c. shredded sharp cheddar cheese (about 4 oz.)
1/4 c. sliced pitted ripe olives

Heat oven to 350 degrees. Melt shortening in medium skillet. Add onion; cook and stir until tender. Drain sauce from tamales; stir sauce, corn (with liquid), tomato sauce and chili powder into skillet. Simmer, uncovered 5 minutes.

Pour into ungreased square pan, 9"x9"x2". Stir in half the cheese. Remove papers from tamales; arrange tamales spoke fashion in pan. Sprinkle olives and remaining cheese in center. Cover; bake 15 minutes. 4 servings.
