ZUCCHINI CUSTARD PIE | |
1 unbaked pie crust shell 2 c. zucchini, peeled and grated without seeds 2 eggs, combined and blended together 3/4 c. sugar or 8 packs Sweet 'n Low 1/2 tsp. salt 1 can evaporated milk 1 tbsp. cornstarch 1/2 c. shredded coconut (optional) Mix all ingredients together and pour into unbaked pie shell. Bake at 350 degrees for 40 minutes or until done. |
