BLENDER PUMPKIN PIE 
1 can (16 oz.) solid pack pumpkin
1 can (12 oz.) evaporated skim milk
2 eggs
1/2 c. biscuit mix
18 packets artificial sweetener
1/4 tsp. ground cloves
1 tsp. cinnamon
2 tsp. vanilla
1 pkg. (.92 oz.) no-sugar-added whipped topping mix with artificial sweetener

Grease a 9 inch glass pie plate. Place all ingredients in blender, food processor or mixing bowl. Blend 1 minute or beat 2 minutes with mixer. Place in bowl and microwave until thoroughly heated, stirring frequently. Pour into glass pie plate.

Microwave on medium (50 percent) 15 to 20 minutes. May need to shield outer edges with foil after 5 to 6 minutes; then continue to cook. Pie will be done when the edges are set and the center is still slightly soft.

Let stand at room temperature about 15 to 20 minutes. Prepare whipped topping and spread on cooled pie. Makes 8 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
