ALICIA'S SPINACH 
Half slick of butter
1 lg. onion, thinly sliced
1 bag washed spinach
2 eggs, slightly beaten

Saute onions in butter in large frying pan - wash spinach in water several times to remove all sand and drain in colander - add spinach to onions, stir and cover until spinach is limp and cooked al dente; add eggs, cover until set - serve immediately.
