ALMOND SPINACH SALAD 
1 lb. spinach, fresh, dried & crisped
1/3 c. sliced almonds, toasted in butter
1/3 c. crispy bacon bits
1 med. onion, thinly sliced & separated into rings (or 4 chopped green onions & stems)
1 can mandarin oranges, drained

DRESSING:

8 tbsp. salad oil
1/2 tsp. pepper
2 tsp. vinegar (red wine vinegar is even better)
1 tsp. salt
1 tbsp. lemon juice

Put dressing on spinach and toss all together just before serving.
