AAA+ FLORA'S FABULOUS LEMON PIE | |
1 cup of sugar 1/4 cup of flour salt 1 cup of water 3 eggs (separated) 2 tbsp butter 1/4 cup of lemon juice 2 tsp grated lemon rind Mix sugar, flour, salt. Add 1/4 cup of water and mix until smooth. Add the rest of the water, and bring the mixture to a boil, stirring all the while. Cook until thickened and the flour is cooked (5 - 8 minutes). Beat the egg yolks. Add some of the hot mixture to them, then add the heated yolks to the sugar/flour/ water mixture. Cook 2 or 3 minutes. Remove from heat add the lemon juice, rind, and butter. Mix well and let cool before putting it into a baked pie shell. Beat the whites until stiff, add 1 or 2 tbsp sugar and a few drops of vanilla. Beat very well at very high speed. Spread on the lemon filling. Bake at 300 degrees until the white is brown. This is an old family recipe. Submitted by: Flora W. |
