CORNBREAD SALAD 
2 boxes Jiffy cornbread mix
1/2 c. chopped green pepper
1/4 c. chopped green onion
1/2 c. chopped tomatoes
1 c. mayonnaise

Prepare cornbread as directed on box; bake 15 minutes and cool completely. Crumble cornbread in large bowl. Stir in other ingredients. Cornbread should be moist but not soggy.
