PHILADELPHIA "PHUDGE" 
4 oz. unsweetened chocolate
1 tbsp. butter
8 oz. pkg. cream cheese, softened
4 c. (1 lb.) sifted powdered sugar
1 tbsp. vanilla extract
1/8 tsp. salt
1/2 c. toasted chopped pecans (see note)

Melt chocolate and butter together over low heat (or use a microwave). Stir until smooth. Beat cream cheese with mixer until fluffy. Blend in chocolate mixture. Add powdered sugar, vanilla and salt. Beat until smooth. Stir in nuts. Spread into an 8 inch square pan (easier if lined with foil). Chill until firm. Cut into squares.

Note: You can substitute 1/2 cup chopped candied cherries, 1/3 cup crushed peppermint candy, or 1/2 cup peanut M & M's for the nuts.

Since microwave ovens vary in power, you may need to adjust your cooking time.
