DAD'S OATMEAL COOKIES 
2 c. sifted flour
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 c. shortening (2 sticks butter)
1 c. brown sugar (packed)
1 c. white sugar
2 eggs, beaten
1 tsp. vanilla
1 c. quick rolled oats
2 c. coconut

Cream shortening and sugars well. Beat eggs, add vanilla and beat until creamy. Add dry ingredients slowly. Mix well. Drop by teaspoonfuls on ungreased cookie sheets and bake 350 degrees for 10-12 minutes.

(Dad waits until they swell up, then cookies begin to level off before he removes them from the oven. He doesn't wait until they get brown, this makes them a little on the chewy side.)
