CATFISH CHOWDER | |
1 lb. catfish filets, skinned 4 slices bacon 1 sm. onion, chopped 1 lb. tomatoes, chopped 1 lb. tomatoes, cooked and diced 1 tsp. pepper 1/2 tsp. thyme 1 tbsp. lemon juice 1/3 c. tomato sauce Fry bacon until crisp. Remove and set aside. In bacon drippings, cook onion until tender. Cut fish into 1 inch pieces and add with remaining ingredients. Cover and simmer 10 minutes or until fish flakes easily. Add crumbled bacon and serve. |
