SPANISH RICE 
2 slices bacon
1/3 c. white rice
1 tsp. instant minced onion
2 tbsp. minced celery
2 tbsp. minced green pepper
1/2 tsp. salt
1/8 tsp. pepper
2 c. stewed tomatoes

Place diced bacon in 12 inch skillet; cook slowly until bacon is crisp. Add washed and drained rice, onion, celery, green pepper, salt, pepper and tomatoes; mix well. Bring to boil. Cover skillet; cook over low heat 35 minutes, stirring occasionally.
