SHEPHERD'S PIE 
2 tbsp. vegetable oil
1/2 c. chopped onion
1 1/2 lbs. ground lean beef
1 (8 oz.) can tomato sauce
1 tbsp. Worcestershire sauce
2 tbsp. chopped parsley
1 tsp. salt
2 tbsp. flour
2 tbsp. water
3 c. mashed potatoes

In a large skillet, heat oil. Add onion and saute for one minute. Add ground beef. Cook and stir until brown, about 5 minutes. Stir in tomato sauce, Worcestershire sauce, parsley and salt. Bring to boiling point. Blend flour with water and blend into beef mixture. Cook and stir until slightly thickened, about one minute.

Pour into a 1 1/2 quart casserole dish. Spread mashed potatoes over beef mixture. Score top of potatoes with tines of fork. Bake in a preheated 400 degree oven until potatoes are lightly browned, about 10 minutes. Serves 6.
