BREAKFAST SAUSAGE CASSEROLE 
8 tsp. reduced-calorie butter (divided)
8 slices reduced-calorie bread - toasted
16 oz. turkey sausage - browned & crumbled
8 oz. grated cheddar cheese
4 eggs, beaten
1 c. skim milk

Spread 1 teaspoon butter on each slice of bread, then cut into small squares. In 9 x 13 inch glass dish, layer ingredients in following order until used up: bread, sausage, cheese (finish with cheese on top). Mix in separate bowl, the eggs and milk. Pour this mixture over other ingredients in casserole dish. Cover and refrigerate overnight. In the morning bake at 350 degrees for 40 minutes. Can be prepared in the morning, refrigerated, and bake for the evening meal.

Each serving equals: 1/2 fat exchange, 1/2 bread exchange, 3 protein (includes 1 hard cheese & 1/2 egg) and 1/8 milk exchange.
