PUMPKIN COOKIES 
1/2 c. shortening
1 c. sugar
2 eggs, beaten
1 c. Libby's solid pack pumpkin
1 c. raisins (optional)
1 c. chopped nuts (optional)
2 c. sifted flour
4 tsp. baking powder
1 tsp. salt
2 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ground ginger

Cream shortening and gradually add sugar until light and fluffy. Add eggs and pumpkin. Mix well. Sift flour, baking powder, salt, cinnamon, nutmeg and ginger. Stir dry ingredients into pumpkin mixture and mix well. Add raisins and nuts. Drop by teaspoonful on greased cookie sheets.

Bake at 350°F for approximately 15 minutes.
