CHICKEN AND DUMPLINGS | |
6 to 8 c. all purpose flour 2 tbsp. shortening 1 stewing hen or chicken Pepper In salted water, boil chicken 45 minutes to 1 hour until tender. Remove meat from bone and return to stock. In medium bowl combine flour and shortening. Add enough water to make soft dough. Roll on floured surface until thin, cut into strips. Bring chicken stock to boil, add strips of dough to cover chicken, sprinkle with pepper. Cover and let simmer for a few minutes while cutting extra strips. Uncover, stir, add strips of dough and sprinkle with pepper. Repeat until all of dough is used or there is enough dumplings. Simmer until just thickens. |
