BLUEBERRY BREAD | |
3 c. flour 2 tsp. baking powder 1/2 tsp. salt 1 1/3 c. sugar 1/2 c. flaked coconut 1/2 c. milk 2 c. blueberries (used Juneberries) 1 c. drained, crushed pineapple 1 tsp. baking soda 2/3 c. Crisco 4 eggs 1 1/2 tsp. lemon juice Put dry ingredients into bowl. Stir in eggs, milk, lemon juice, pineapple, sugar and shortening. Mix well. Fold in berries and coconut. Makes six 6 x 3 1/4 x 2 1/4 loaves or 2 regular loaves. |
