BEEF AND PINEAPPLE CURRY 
2 lb. round steak, cut into 1-inch cubes
2 lg. onions, chopped
6 tbsp. vegetable oil
6 tbsp. curry powder
4 c. beef stock (bouillon)
1 1/3 c. unflavored yogurt
1 20-oz. can pineapple chunks, drained
Long-grain rice
Shredded coconut

Fry the meat and onion in the oil until meat is brown and onion is tender. Stir in the curry powder and cook for 2 minutes. Blend in the stock and yogurt; cover and simmer until the meat is almost tender, about 1 to 1 1/2 hours. Add the pineapple and simmer 15 minutes more. (Be sure the meat is tender.)
