Lg. can crushed tomatoes in sauce 1 sm. eggplant 1-2 yellow squash 1-2 zucchini 1 med. size onion 1/2 lb. chopped meat (more may be used) Mozzarella, sliced or grated Salt and pepper to taste, if needed Cube vegetables (not onion) and cook with tomatoes until just crisp done. Meanwhile slice onion thin and brown with meat in frying pan. Place vegetables and sauce in casserole. Spread meat and onion over top and cover all with cheese. Place in oven at 375 degrees until cheese is golden and bubbling. Freezes well. Can be done without meat. |
