APPLE FRITTERS 
3 lg. tart apples
Sugar
Cinnamon
3/4 c. flour
1 tbsp. sugar
1 tbsp. melted butter
1/4 c. warm water
1 egg white, stiffly beaten
Pinch of salt
1 egg yolk
chopped nuts

Peel and core apples, cut into thin slices and sprinkle with sugar, cinnamon. Cover and let stand about 1 hour. Drain apples well reserving juice and sift flour and 1 tablespoon sugar into a mixing bowl, stir in melted butter and 1/4 cup warm water, or enough for smooth batter. Batter should be just thick enough to coat apples slices. If too thick, thin with a little juice. Just before using batter, fold in egg white, salt and beaten egg yolk. Dip apple slices into fritter batter and fry a few at a time in hot deep fat 370 degrees until golden brown. Put fritters on cookie sheet, sprinkle with sugar and set in 400 degree oven for 5 minutes to glaze. Sprinkle with nuts.
