APPLE FRITTERS 
FRITTER BATTER:

1 c. flour
1 tsp. baking powder
1/4 tsp. salt
1 egg white
2 tsp. sugar
1 egg yolk
2/3 c. milk
1 tsp. olive oil or melted butter

Sift flour, baking powder and salt. Beat egg white until stiff and beat in sugar. Beat egg yolk until thick and lemon colored, add milk and oil. Stir in flour mixture. Fold in egg white.

Peel and core apples (Cortlands are best) and cut in 1/2 inch slices. Heat fat to 370 degrees. Dip apple pieces in batter, lift out with long handled fork, letting excess batter drain into bowl. Put into fat and fry until delicately brown, 3-5 minutes. Drain on paper towels. Serve with maple syrup.
