CHOCOLATE CHIP OATMEAL COOKIES 
1 1/4 c. butter
3/4 c. packed brown sugar
1/2 c. sugar
1 egg
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
3 c. oatmeal
1 c. chocolate chips
1 c. chopped walnuts (opt.)

Beat first 5 ingredients well. Add flour, soda, and salt; mix well. Stir in oats, chips and nuts. Dip rounded spoonfuls on ungreased cookie sheet. Bake 8 to 11 minutes (8 minutes for a chewy cookie to 11 minutes for a crisp cookie) in a 375 degree oven. Store tightly covered.
