JAMBALAYA 
1 lb. kielbasa
1 chicken, cut up
2 c. uncooked rice
1 c. chopped green onions
2 cloves minced garlic
1/2 c. chopped celery
1/4 c. chopped bell pepper
2 tbsp. oil
1 c. tomato sauce
4 c. hot water
1 tsp. salt
1/2 tsp. pepper
Hot sauce to taste

Cook kielbasa in 2 tablespoons oil on medium high heat. Remove from pan. Cook chicken 5 minutes on each side, remove from pan. Place seasonings in pan and cook until brown. Add chicken, kielbasa, rice, water and tomato sauce. Mix only once, cover and let cook for 45 minutes.
