CRANBERRY FRUIT BREAD 
2 c. all-purpose flour
1 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
Juice and grated rind of one orange
2 tbsp. melted shortening
1 egg, well beaten
1/2 c. chopped nuts
2 c. halved fresh cranberries

Sift together flour, sugar, baking powder, soda and salt. Combine orange juice, grated rind, melted shortening and enough water to make 3/4 cup juice. Stir in beaten egg.

Pour this mixture into dry ingredients, mixing just enough to dampen. Fold in cranberries and nuts. Spoon into greased loaf pan (9x5x3) spreading evenly, making corners slightly higher than center. Bake in 350 degree oven for 50-60 minutes. Remove from pan; cool. Store overnight for easy slicing.
