BUTTERMILK BISCUITS 
2 c. sifted enriched flour
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1/3 c. shortening
2/3 c. buttermilk

Combine flour, baking powder, baking soda and salt in mixing bowl with a blender or 2 knives cut into shortening until it is broken into fine particles. Add milk and stir gently with a fork until dough holds together. Gather dough into a ball, turn it onto a lightly floured board and knead gently with floured finger, about 12 kneading strokes. On a lightly floured board, roll dough 1/2" thick. Cut dough with floured biscuit cutter and place biscuits on a baking sheet about 1" apart. Bake at 425 degrees for 12 to 15 minutes. Makes 16 (2') biscuits.
