HAM AND CHEDDAR EGGS 
4-5 green onions, sliced
2 tbsp. butter
1 dozen eggs
1 1/2 c. milk
3/4 tsp. salt
1 1/2 c. cooked ham, cubed
3 1/2 c. Cheddar cheese, grated

Saute onions in butter. Beat eggs with milk and salt. Add onions, ham, and 3 cups cheese. Pour into greased 3 quart casserole or baking dish. Bake, uncovered, for 35 minutes at 350 degrees or until mixture is set. Sprinkle with remaining cheese and return to oven until cheese melts. Serves 8-10.

Variation: Substitute bacon for ham; substitute Monterey Jack for Cheddar cheese; add sauteed mushrooms.
