SPANISH NOODLES 
1 lb. ground beef
2 1/2 tsp. salt
1/8 tsp. pepper
1 sm. onion, diced
1/4 c. green pepper, diced
1/2 c. sliced mushrooms
2 c. uncooked noodles
3 c. tomato juice
Pinch oregano, thyme and basil

Brown meat with salt, peppers, onion and mushrooms. Add remaining ingredients and cook on low heat, covered for 45 minutes. (I partially cook and place in covered casserole in oven to finish.) Last 15 minutes cover with grated cheese and put back in oven, uncovered, until cheese is melted.
