FRESH CARROT CAKE 
1 1/3 cups vegetable oil
2 cups sugar
4 eggs
2 cups all-purpose flour
2 tsp. baking soda
1/4 tsp. salt
1 tbsp. cinnamon
3 cups grated carrots (about 1 lb.; a food processor does them good)
1 cup nuts (optional; I put them in the processor with carrots)

Stir oil and sugar together; beat in eggs, one at a time.

In another bowl, sift flour, baking soda, salt and cinnamon together. Add the sifted mixture to egg mixture and stir well (I use my mixer). Add grated carrots and mix well.

Bake in a greased pan at 325°F for 30 to 35 minutes.

Note: You can use loaf pans instead of the round cake pans but it will make 2 layers. Also you can cut the ingredients in half if you don't want a large cake.
